If you place a bid early on, Ebay will do proxy bidding for you. That is, it will remember how much is the maximum amount you want to pay and bid up to that amount automatically. The problem is that lots of people will keep bidding until they have the high bid. When you "snipe" an auction, your bid doesn't come in until seconds before the end, so nobody can increase the bids just because they saw yours. Sniping gives you a big advantage.
